Champagne Salon

A sense of the refined elegance and all the passion of the roaring 1920s period can be found in a sparkling flute of Champagne Salon, which was the house champagne at Maxim’s in Paris. Everything about this champagne is out of the ordinary. From the start, Aimé Salon had a determined idea; his personal taste was for a champagne that was elegant, fine and subtle, but at the same time well-structured. As a hobby, he made champagne for himself and his friends only choosing the best Chardonnay, from one single Grand Cru village, in the Côte des Blancs. He established Salon in 1921 and ran the company himself until his death in 1943. From 1905 to 1990, only 20 vintages were declared.

Even today, Cuvée S de Salon is still produced from a one-hectare parcel owned by Salon himself (called ‘Salon’s Garden’) and from 19 other smaller parcels in Mesnil-sur-Oger, originally chosen by Aimé Salon at the beginning of the 20th century. Champagne Salon still only produces one wine, one vintage, Blanc de Blancs and it is the level of acidity that makes Salon so superbly fresh and vibrant. The slow marriage of acidity and fruit over 10 years of aging on the lees in the cellars gives each highly sought after bottle of Champagne Salon elegance, finesse, balance and exceptional depth, as well as a fine and delicate mousse. Often compared with the best Burgundies, simply put, Salon is a grand vin … with bubbles. According to Master of Wine and supreme champagne expert, Serena Sutcliffe, you should never drink Salon until it’s at least 25 years old.
